Tasso Ham is a cured "steak" of pork shoulder that is rubbed in a Cajun spice mix and then smoked over fire using hickory & cherry wood. It can be sliced and eaten after smoking and used as charcuterie or can be fried like bacon and used for any number of delightful sandwich contraptions! You can also add it to gumbo, jambalaya, beans, soups, and any number of dishes needing a little smoke and some heat. Think of this a cajun bacon - it's like bacon with a little kick of heat from cayenne.
